Easy Lemon Pie


I thought I had put this recipe on here earlier but after checking again a few minutes ago, I found I hadn't. This is the easiest lemon pie I have ever made. It's delicious too.

1 8 ounce Cool Whip or whipped topping of your choice
1 6 ounce can frozen lemonade concentrate (DO NOT dilute it) (You can use the pink lemonade or limeade. If you want more color to your pie, add a drop of food color).
1 can Sweetened condensed milk
1 graham cracker pie shell or if you prefer a baked shell, it is great too. Just prebake it and let it cool before adding your filling.

Mix the Cool Whip, lemonade, and milk. Pour into the pie shell. Chill until set. I like to top the pie with one thinly cut twisted slice of lemon. Enjoy!
Sometimes, instead of using a crust, I put the filling in parfait glasses with a few sprinkles of vanilla wafers or graham crackers between the layers of filling and some extra cool whip.

    This is just up my alley.. easy for my girls to help me with and it is also in our budget! Not to mention how yummy it sounds!!

    Thank you all so much for stopping by. Those of you who have tried the recipe, I'm glad you liked it. I have refrained from making this pie recently because I am trying to lose weight. I've lost 10 pounds in about 2 weeks. If it is in the house, and as good as it is, I will just have to eat it.
    I'll be making one of these pies for Easter and will place a picture of it on here at that time.
    Please look back at some of the other recipes I've placed on here. Since I've taken over this blog from my husband, Chilly, I've been trying to add pictures as I've made a dish.

    I had totally forgotten about this recipe until I wrote my cookbook. In my book I included stories about the different recipes and with this one my story was about making this to take to a friend's house for dinner, hitting a bump on the road and it toppling over onto the floor of the car. That's when I learned that you ALWAYS transport food in containers with lids.

    I have made this lemon pie for years. It is a family favorite. Recently I tried something new. Instead of graham cracker crust I took crispy ginger snaps and put them in the food processor to make the crumb mixture, added a little melted butter to moisten and pressed into a pie plate. Added 1 teaspoon of lemon zest to filling. Talk about yummy. You wont believe how this one taste. Please try this with the ginger snaps as it gives it such a full bodied flavor that compliments the lemon.
