Hush Puppies

These are one of my favorite foods.

A deep fryer or Dutch oven filled with hot canola oil.
1 egg
1 cup self rising corn meal
1/2 cup self rising flour
1 onion chopped in very small pieces
1 teaspoon baking powder
Pour and stir in enough milk to make a moist mixture with all of the ingredients listed above

Mix and drop by tablespoons into the hot canola oil. Fry until golden brown all around. Remove from the oil and place on paper towels to drain off excess oil.

These are delicious with seafood or barbeque. Also, if you have extra batter, it will stay fresh to cook the next day if it is covered and placed in the refrigerator.

I never ever fry anything; but my hubby does love hush puppies. He gets them when we get dinner at City Barb b Q. I usually eat one, since he gets a double order that works out pretty well.

My daughter has a friend that comes down from NJ to visit now and then. The 1st thing she wants to do is go somewhere that serves hushpuppies. I used to go fishing in GA and cook fresh fish and hushpuppies over the campfire. I miss that great taste. Glad to see you posting.

It looks yummy, I should try this sometimes.

I just stop to let you know that I tried the bacon on broiler inside the oven today. You are right they are extra crispy but they cooked uneven for me. Plus, they are very dry and the one that cooked in a microwave taste better...:)) I guess I am sticking to pan cooking the bacon. Again, thank you for the tip.

    Have a great week ahead!

These hush puppies remind me so much of fry bake that we make in Trinidad and Tobago. A simple recipe worth trying. :-)
